Forest fruit salads

Los arándanos son muy ricos y sanos

Time required: 20 minutes

Ingredients for four people:

  • Leaves of lettuce and / or spinach 250 gr.
  • Nuts, almonds and peanuts 70 gr.
  • Blueberries and raspberries or strawberries 60 gr.

For the vinaigrette:

  • Modena vinegar 2 tablespoons.
  • Virgin olive oil 6 tablespoons.
  • Honey 1 tablespoon.

Elaboration

Step 1. Wash and slice the lettuce leaves to a medium size (can be combined with raw spinach) and prepare a green bed with them. Lettuce has a high content in water and is rich in antioxidants such as vitamins A, C, E, B1, B2, B3, B9 and K and minerals: phosphorus, iron, calcium, potassium and amino acids.

Step 2. Wash and add the red fruits. Cranberries and raspberries are not only delicious, but they also bring interesting benefits and nutritional properties: especially rich in antioxidants, they help prevent cardiovascular diseases and are useful for improving circulation and fighting cholesterol.

Step 3. Once filleted, nuts, almonds and peanuts are added. Nuts are also called “super food” because they contain Omega 3 fat acids, whose most outstanding properties are to improve cholesterol levels, not to allow Weight gain, protect the heart, decrease bone degradation, among others.

Finally the salted ingredients of the vinaigrette are emulsified to taste just before serving. Voilà!
